What is a Cheese Tour?

A cheese tour is a place to learn all about cheese. It is a place for the public to come together, sample and buy specialty cheese, see animals and learn about where their cheese comes from. You can learn how cheese farmers cultivate the soil, produce crops, raise livestock and also the preparation and marketing of their cheese. At some cheese tours, you can learn how to make different types of cheese.

When you are at a cheese tour, you will learn about how cheese is made. When milk is “started,” the milk is heated. A substance called rennet is added which curdles the milk. The curds are cut into peanut sized pieces and cooked at a low temperature, being constantly stirred. This separates the curds from the whey or watery part of the cheese that did not curd. The whey can be used to help produce insulin and is also used in baby formula.

Once the curds and whey have been separated , the curds are salted, cut, stacked and turned many times. After this the curds are milled and the bandaging process begins. This is when the milled curds are prepared with cheese cloth. The bandaging is left on then put into forms, or sealed metal buckets that are stacked and pressed. The forms are dated and labeled and then put into a curing room to age. They can stay in the curing room for days, even years, being inspected and turned regularly by hand.
